Ingredients
- ✓lean beef eye of round 300g (cut into 3cm cubes, visible fat trimmed)
- ✓broccoli 200g (cut into small florets)
- ✓red bell pepper 100g (sliced into strips)
- ✓white miso paste 10g (about 1.5 teaspoons)
- ✓low sodium soy sauce 10ml (about 2 teaspoons)
- ✓mirin 5ml (about 1 teaspoon)
- ✓fresh ginger 5g (grated)
- ✓garlic 3g (minced)
- ✓sesame oil 5ml (for flavor)
- ✓black pepper 0.5g (ground)
Instructions
Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
In a small bowl, whisk together miso paste, soy sauce, mirin, grated ginger, minced garlic, and sesame oil until smooth.
Place the beef cubes in a bowl or ziplock bag, pour half of the marinade over them, and toss to coat. Let sit for 5 minutes.
On the prepared baking sheet, toss broccoli and red bell pepper with the remaining marinade. Spread them evenly.
Add the marinated beef cubes to the baking sheet, spreading them out among the vegetables. Sprinkle with black pepper.
Bake in the preheated oven for 15-18 minutes, or until beef is cooked through and vegetables are tender-crisp.
Remove from oven and let it rest for 2 minutes before serving.
