Ingredients
- ✓salmon fillet(fresh or thawed)
- ✓broccoli(cut into small florets)
- ✓carrot(sliced or cut into strips)
- ✓olive oil(or other vegetable oil)
- ✓sea salt(adjust to taste)
- ✓black pepper(freshly ground preferred)
- ✓lemon(optional, for juice)
Instructions
Pat salmon dry with paper towels, season both sides evenly with sea salt and black pepper, let marinate for 10 minutes
Cut broccoli into small florets, slice carrots. Bring water to boil, add salt, blanch vegetables for 2 minutes
Heat olive oil in a pan over medium heat until just starting to smoke
Place salmon skin-side down, pan-fry for 3-4 minutes until golden and crispy, gently flip
Continue cooking for 2-3 minutes until desired doneness (medium-rare: pink inside, well-done: white throughout)
Plate salmon with blanched vegetables, squeeze fresh lemon juice on top, serve immediately
